Cheese Puffs Recipe

Ingredients:
  • 4 ounces Cheddar cheese
  • ⅛ teaspoon Bickford Nutmeg Flavor
  • 1 cup water
  • 1 cup potato starch flour
  • ½ cup (1 stick) margarine or butter
  • 4 large eggs 

Directions:

Preheat oven to 400°.  Grate the cheese (you should have 1 cup). Set aside. Place water, margarine and Bickford Nutmeg Flavor in a 2- to 3-quart saucepan. Bring to a full boil over medium heat. Turn off the heat and add the flour all at once, stirring until mixture leaves sides of pan and forms a ball. Remove from stove.  Add eggs, one at a time, beating well after each addition. Stir in ½ cup of the grated cheese. Drop the mixture by small spoonfuls onto a greased baking sheet to make balls about 1½ inches in diameter. Sprinkle remaining cheese on puffs.  Bake at 400° for 20 to 25 minutes, until golden brown. Remove baking sheet from oven. Prick the puffs with a fork and return to turned-off oven for 5 minutes to crisp. Serve warm. Makes about 3 dozen puffs.
